These delightful little nuggets have it all: super moist, great crispy texture, they're baked, not fried, and they are totally addicting!
Ingredients
- 2 boneless, skinless chicken breasts, cut into 1" cubes
- ½ C. butter milk
- 3 tbsp. hot sauce (optional, but makes it taste soooooo good)
- salt & pepper
- 1 package of shredded wheat, crushed
- ¼ C. grated parmesan cheese
- 2 tbsp. olive oil
- Dipping sauce
Directions
Heat your oven to 375F.
Season the chicken with salt and pepper. In a medium bowl, combine buttermilk and hot sauce. Add the chicken and let it sit for 15-20 minutes in the fridge.
Spread the crushed Shredded wheat in a shallow bowl, add another ½ tsp. or so of salt. Add the parmesan cheese and olive oil and combine. One by one, coat each piece of chicken in the Shredded Wheat mix, and place in a single layer on a large baking sheet.
Bake for 15-20 minutes, until the chicken reaches and internal temperature of 165F.
Serve with ranch, salsa, jalapeño, or just about any sauce you can imagine!
