So good, so easy. This is the perfect weeknight meal, and the strong flavours make it seem like it was a lot harder to make than it actually was. Video below!
Ingredients
- 1 package of your favourite pasta (or you can do homemade, you overachiever you.)
- 2 tbsp. olive oil
- 1 C. pancetta, cubed
- 3 cloves of garlic, thinly sliced
- 3 tbsp. tomato past
- 1 C. pasta water
- 1 C. asparagus, cut into bite-sized pieces
- salt and pepper, to taste
- 1.5 C. heavy cream
- ¾ C. grated parmesan cheese
- ⅓ C. parsley, chopped
- basil leaves, for garnish
- fresh black pepper, for garnish
Directions
Heat a pot of boiling water. Add a handful of salt (it should taste like the ocean). Add your pasta and cook.
Meanwhile, heat your olive oil over medium high in a cast-iron skillet. Add the pancetta and cook until crisp. Add the garlic and cook until fragrant. Add the tomato paste and mix until coating the pancetta.
Add your pasta water and combine. Cook until reduced by half.
Add your asparagus to a microwave safe bowl, along with about an inch of water. Cover with plastic wrap and microwave for 3 minutes. (Be careful when you take it out! It will be so hot!)
Drain the asparagus and add to the pancetta sauce. Add the heavy cream and heat thoroughly. Add the parmesan cheese. Season with salt and pepper. Let the sauce thicken, and then add the pasta and mix.
Serve in a large pasta bowl, topped with parsley, fresh pepper, and basil leaves.
