Also known as the Lazy K-Zee. I created this cocktail for my little sister's wedding. It suits them.
Peach Mint Syrup
- 1 C. brown sugar
- 1 C. water
- 2 ripe peaches, cut in half and pits removed
- 1 C. fresh mint leaves
Add sugar and water to a medium saucepan over medium-heat. Bring to a simmer and allow sugar to dissolve completely.
Remove from heat and add peaches and mint leaves. Allow to steep for at least 20 minutes (and up to two hours).
Strain and store in the fridge in an airtight jar.
Peach Mint Smash
- 3 fresh mint leaves
- 2 oz. bourbon
- 2 tbsp. peach mint syrup
- splash of ginger beer
- sprig of fresh mint (for garnish)
Place 3 mint leaves in cocktail shaker. Muddle for about three twists.
Add ice to a cocktail shaker. Add bourbon and peach mint syrup. Stir for 30 seconds. Strain into a double rocks glass over ice.
Add a splash of ginger beer to finish it off and for some zip.
Garnish with a sprig of mint.
