These blini take 5 ingredients, almost no time to make, and taste like some magical combination of Yorkshire pudding and pancakes. I mean, come on.
Ingredients
- 1 C. flour
- 1 C. whole milk
- ½ C. salted butter
- ½ tsp. salt
- 4 tbsp. vegetable oil, divided
- Smoked salmon
- Crème fraiche or sour cream (IMO, crème fraiche is the better choice here)
- Fresh dill, for garnish
Directions
Combine flour, milk, butter, and salt in a medium bowl. Whisk until smooth(ish). It's ok if it still has some lumps in it.
Pour 1 tbsp. of oil at a time into a non-stick skilled over medium heat. Drop batter using a 2 tbsp. cookie scoop into the pan. Let them fry until you start seeing little bubbles pop up in the middle, similar to pancakes. Flip and cook another 3-4 minutes. Remove to a wire rack.
Repeat with the remaining batter. Should make 15-20 blini.
Build your smoked salmon blini: start with a blini. Place about a half a tsp. of creme fraiche on each on. Next place a chunk of smoke salmon on top. Finally, garnish with a small sprig of fresh dill.
