These cocktails taste like strawberry shortcake in liquid form - and they're super easy to make!
Growing up in Ontario, one of the best times of year was strawberry season. Many families, including ours, would often head to huge strawberry farms that had row upon row of the freshest, sweetest, juiciest strawberries imaginable. Now, whenever I go home in June I make sure that's pretty much all I'm cooking with. Obviously, strawberry shortcake is a quintessential dessert for the Campbell's, so I set out to add alcohol and make it drinkable (as one does).
To make this cocktail, you need strawberry simple syrup. I have this on hand almost all the time from May-July, because it's just so versatile. I use a very standard recipe for all my simple syrups: 1 cup water + 1 cup sugar + 1 cup flavour. It can be nearly any type of produce you want, in any combination. You can also use tons of different spices (awesome in winter months) - although don't add nearly as much. Feel free to experiment - once I started making my own syrups, this is when my love of cocktails really started to take off.
If you want to make this recipe super easy, you can substitute the simple syrup for strawberry sundae syrup from the store. It might make this already sweet cocktail sweeter though.
One of my favourite parts of this cocktail is the graham cracker rim. Again - simple - just buy the stuff from the grocery store.
As I mentioned - this recipe is incredible sweet, and would be perfect for an after dinner cocktail on a warm, June evening.

Strawberry Shortcake Cocktail
Equipment
- Cocktail shaker
Ingredients
- 2 oz strawberry simple syrup
- ¼ cup graham cracker crumbs
- 2 oz vodka
- 3 oz cream soda
- 1 fresh strawberry for garnish
Strawberry Simple Syrup
- 6-7 fresh strawberries
- 1 cup water
- 1 cup sugar
Instructions
- Make the strawberry simple syrup. Combine water, sugar and strawberries in a medium saucepan over medium high heat. Bring to a boil, and then reduce to a simmer. Cook until strawberries are soft. Strain and cool.
- Pour a little of the strawberry syrup in a bowl. Pour the graham crackers in a second bowl. Dip the rim of your glass into the syrup, and then the graham crackers. Set aside.
- Combine the strawberry syrup and vodka in a cocktail shaker filled halfway with ice. Shake for 30 seconds. Strain into glass.
- Top with fresh strawberry. Enjoy!
