Maple Roasted Butternut Squash

Maple roasted butternut squash is one of the best side dishes as we head into the colder months of the year. It's nutty, sweet, and perfectly seasoned with maple syrup and a hint of chipotle powder.

It's also super quick and easy (once you get the squash dealt with, that is. I hate that job). It goes perfectly with pretty much any meat: chicken, turkey, pork, or beef, making it great for holiday season entertaining.

Ingredients

Super easy. Feel free to adjust the chipotle level to suit your tastes. 

Combine

Combine the olive oil, maple syrup, salt, pepper and chipotle spice. 

Whisk

Whisk everything together until well combined. 

Toss

Pour the maple mixture over your butternut squash until it's well coated. 

Roast

Spread evenly on a baking sheet in a single layer. Roast at 400F for 20-30 minutes, until the squash is tender. 

Caramelize

It should be slightly caramelized when it comes out of the oven. So Delicious!

Garnish

Garnish with sage leaves (even better if you fry them) and you're good to go!

Serve hot!
