Homemade hollandaise sauce is the ultimate sauce for anyone who loves rich and creamy flavors. It's the perfect mix of tangy and buttery goodness that takes any dish to the next level.

Hollandaise sauce can be tricky to make - it's easy to overheat the eggs and be left with a scrambled mess (we've all been there, don't worry). But let's go through it step by step!
The ingredient list is simple: eggs, butter, lemon juice and cayenne pepper.
Combine all your ingredients except for the butter in a heat-proof bowl that will fit snuggly into a saucepan on the stove.
Whisk everything together until well combined.
Simmer 2-4" of water in a saucepan (remember, make sure your bowl fits in this pan WITHOUT touching the water!).
Put your bowl over the simmering water. Slowly drizzle in the butter while whisking constantly. Be patient, this can take some time.
Keep whisking until the sauce thickens. Do NOT increase the heat or stop whisking. This is how the eggs can scramble.
The sauce is done when it's thick enough to coat the back of a spoon. Taste for seasoning at this point, add more salt if needed.
You can keep the sauce warm by letting it sit over very low heat on the simmering water.
A classic choice, you can't have eggs benedict without the hollandaise sauce!
