Brussels Sprouts with Bacon

Brussel's sprouts with bacon is the ultimate side dish. Incredible quick and easy, yet it delivers big-time on flavor. The bitterness of the sprouts is tempered by the fat in the bacon. Cook at high heat and add a simple maple glaze and you've got a to-die-for holiday side dish. If you're making this for a crowd, you're definitely going to want to double the recipe.

Ingredients
 
 

  • 24 Brussel's sprouts trimmed and cut in half
  • 8 slices bacon
  • 4 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon grainy mustard
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F.
  • In a medium frying pan over medium high heat, fry your bacon until it's just starting to brown on the edges.
  • Add your Brussel's sprouts to a large baking sheet with parchment paper in a single layer. Using a slotted spoon, add bacon over the top. Add one additional tablespoon of bacon fat - discard the remainder. Toss to combine.
  • Roast the Brussel's sprouts for 15 minutes, and in the meantime, make the glaze.
  • Combine the olive oil, maple syrup, and grainy mustard in a small bowl. Whisk to combine. Set aside until the Brussel's sprouts have finished roasting.
  • Take the sprouts out of the oven, and add the glaze. Add a small amount of salt and pepper. Toss to combine. Return to the oven for and additional five minutes.
  • Remove from the oven. Serve hot.

Notes

Make sure your Brussel's sprouts are in a single layer on your baking sheet. This will ensure they roast, rather than steam. 
If you want to skip the frying the bacon step, swap the bacon for pancetta. It brings some of the same flavors, just a little less fat, so it won't be too greasy.
