How to Cook Tomahawk Steak

Learning how to cook tomahawk steak isn't difficult - you just need a few key notes and equipment. This recipe calls for the steak to start on the grill so we get a great crust, and smoky flavor. Then we move into the oven so it cooks beautifully and evenly all the way through. Just make sure you have a meat thermometer on hand. The last thing you want to do is overcook this baby!

Equipment

  • Meat thermometer
  • Grill
  • Large oven proof roasting pan/cast iron

Ingredients
  

  • 1 2-3lb tomahawk steak
  • 1 tablespoon coarse salt
  • 1 teaspoon freshly cracked black pepper

Instructions
 

  • Remove the steak from the refrigerator and let it come to room temperature for about an hour.
  • Preheat your grill to high heat. Clean and oil the grates. Preheat your oven to 400°F at the same time.
  • Season steak generously on both sides with salt and pepper.
  • Place the steak on the hot grill and sear for about 2-3 minutes on each side, until you have a nice crust. This will help lock in the juices and give the steak a good char.
  • Transfer the steak to a rimmed baking sheet and place it in a preheated oven set to 400°F. Bake for 8-12 minutes, or until the internal temperature reaches your desired level of doneness (120-125°F for rare, 130-135°F for medium-rare, 140-145°F for medium, 150-155°F for medium-well, and 160°F for well-done).
  • Remove the steak from the oven and let it rest for 5-10 minutes before slicing and serving. This will allow the juices to redistribute and the steak to reach its final temperature.
  • Serve and enjoy!

Notes

I've said it a thousand times already, but the charts and cook times for this steak are a GUIDELINE. You really need a meat thermometer to accurately cook this steak (or any steak for that matter). You want to take the steak out of the oven when it's reached your desired temperature - not when the timer goes off. 
This steak has so much fat in it already, I've never found rubbing it down with oil to be necessary. If you want to though and like the flavor, by all means, go for it.
