Lobster Ravioli

Lobster ravioli is one of life's greatest indulgences, so you need a sauce that's going to hold up to it, but not over power it. Enter this light yet indulgent lobster ravioli sauce.

This sauce is made with garlic, white wine, tomato paste, and flavored with lobster shells and lemon for and absolutely perfect sauce. 

It doesn't have to be hard either. If you don't have lobster or lobster shells, that's ok. The sauce on it's own is still fantastic (and the recipe includes instructions on how to make the sauce without shells). 

Let's Gather the Ingredients!

Every ingredient is meant to maximize flavor, but still let the lobster shine.

Cook Aromatics

Cook garlic, onions, reduce your wine. Add your shells and heavy cream. Simmer.

Strain

Strain the shells, onion and garlic into a bowl, and set aside for a moment.

Finish the Sauce

Add remaining ingredients, plus the strained cream mixture.

Add a little tarragon and extra parmesan for garnish.
