This is a quintessential grilling dish that you'll go back to over and over and over again. All you need are peppers, salt, pepper and oil. That's it, that's the recipe. Less then ten minutes on the grill and you've got a delicious and super healthy side that everyone will love beside grilled chicken, shrimp, or steak!
4-6bell pepperscut in half, lengthwise, seeds removed
2tablespoonolive oil
salt and pepperto taste
Instructions
Preheat your grill over medium-high heat.
In the meantime, prepare you peppers by cutting in half lengthwise, and removing the seeds. Place in a large bowl, and season with olive oil, salt and pepper.
When the grill is hot, place the peppers on the grill. Leave, with the lid closed, for 4-5 minutes. You want the peppers to be just starting to char, but not become mushy and overcooked. Flip the peppers over, and cook for another 4-5 minutes with the lid closed.
Remove from the grill, and serve immediately.

Try this technique with other vegetables as well: think onions, asparagus, zucchini etc. The peppers make a great addition to sandwiches if you have any left over!
