Baked Brie with Fig Jam

Baked brie with fig jam is such an easy, elegant appetizer. It's sure to be appreciated by everyone you're hosting, and disappear quickly! You can definitely switch up the type of jam and herbs/toppings you use. One of my favorites is maple syrup with walnuts, or cranberry sauce with orange zest. Honestly, you can't really go wrong with this recipe.

Ingredients
  

  • 1 8z wheel of brie cheese
  • 1 sheet puff pastry thawed
  • ¼ C fig jam or fig spread
  • 1 tablespoon fresh rosemary chopped
  • 1 egg for egg wash
  • 1 tablespoon milk for egg wash
  • sea salt for garnish

Instructions
 

  • Preheat your oven to 375°F.
  • Lightly flour a clean surface to roll the puff pastry on. Roll the pastry until it's large enough to completely wrap the brie cheese in.
  • Place the brie wheel in the middle of the pastry. Spoon the jam over the brie. Sprinkle on the chopped rosemary.
  • Fold the excess pastry over the top of the brie, so it's completely enclosed. Note: I don't have an expert way of doing this to make it look beautiful! Just do what you need to do :)
  • Place the wheel in a small baking dish.
  • Combine the egg and cream. Brush over the top of the pastry. Sprinkle with sea salt.
  • Bake for 25 minutes, until the pastry is golden brown.
  • Serve piping hot, with crackers.

Notes

Feel free to switch up the type of jam you use, you can really use whatever you'd like!
Try adding some nuts, like walnuts in there too. 
Make sure you're using a wheel of brie, not a wedge. That rind helps keep everything together.
Do your puff pastry up tight! It's not the end of the world if some of the melty cheese escapes, (happens to me all the time), but it's nice if it stays inside the puff pastry.
I like to score my rind on the top so the jam gets down and spreads around. You don't have to do this though, it definitely ups the chances of the cheese escaping!
