Blood Orange Mimosas with Basil Simple Syrup

These blood orange mimosas are going to level up your brunch game, especially with the hint of basil that comes with these! Juice the oranges and make the simple syrup ahead of time, and it's super easy to whip up a big batch of these for company.

Ingredients
  

For the Mimosas

  • 1 oz basil simple syrup see below
  • 2 oz blood orange juice freshly squeezed
  • 2-4 oz prosecco depending on how good you're feeling ;)

For the Basil Simple Syrup

  • 1 C sugar
  • 1 C water
  • 12-15 fresh basil leaves & stems

Instructions
 

Mimosas

  • Combine the syrup and blood orange juice in a champagne flute. Top with chilled sparkling wine.
    Enjoy!

Simple Syrup

  • Bring the sugar and water to a simmer over medium high heat. Cook until the sugar dissolves. Remove from heat and add the basil leaves. Steep for at least 15 minutes, up to 1 hour. Strain and keep in an airtight container in the fridge for up to two weeks.

Notes

You can play with the juice/prosecco/syrup here. More juice/syrup = sweeter flavour, although this cocktail is pretty sweet already. More prosecco = dryer, more bright and bubbly.
