  • 15-20 radishes trimmed and halved
  • olive oil
  • salt and pepper to taste
  • lemon juice optional

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Wash and trim the radishes, then halve them lengthwise.
  • Place the halved radishes in a bowl and drizzle them with olive oil, tossing to coat them evenly.
  • Season the radishes with salt and pepper to taste, and toss again to ensure they are well-seasoned.
  • Arrange the radishes in a single layer on the prepared baking sheet.
  • Roast the radishes in the preheated oven for about 15-20 minutes, or until they are tender and lightly browned, stirring occasionally to ensure even cooking.
  • Remove the roasted radishes from the oven and let them cool slightly.
  • If desired, squeeze fresh lemon juice over the roasted radishes for a burst of citrusy flavor just before serving.
