The Ultimate Make Ahead Mashed Potatoes

This creamy, silky smooth, ultimate mashed potato recipe is total game-changer. They are truly the best mashed potatoes I've ever had (better than Ina Garten's make ahead recipe, even. I know, bold statement). And the best part? You make them ahead of time, up to the day before. Pop them in the oven and they are good to go to feed a crowd.

Ingredients
  

  • 1 bulb garlic
  • 1 teaspoon olive oil
  • 10 medium sized Yukon Gold potatoes peeled and cut in half
  • ¾ C butter
  • C mascarpone cheese
  • C parmesan cheese
  • ¾ C heavy cream
  • 2 teaspoon salt plus more, to taste
  • 3 tablespoon chives for garnish

Instructions
 

  • Preheat your oven to 400°F.
  • Slice the top off of your garlic. Place on a sheet of tinfoil, and drizzle with olive oil. Season with salt and pepper. Gently wrap the garlic in the tinfoil, and bake until soft and golden (30-40 minutes).
  • Meanwhile, boil potatoes over medium high heat until very soft, about 25 minutes. Drain.
  • Rice the potatoes back in to the same pot they came out of. Add the butter, salt, mascarpone cheese and heavy cream. Let it melt together and then stir to mix.
  • Take the garlic cloves and mash them in a small bowl. Add a bit of olive oil to form a paste. Add to the potatoes.
  • Scrape the potatoes into an 8"x4" baking dish. Sprinkle with parmesan. At this point, you can cover and keep in the fridge until they're ready to be eaten.
  • Half an hour before meal time, put the potatoes in a 400°F oven. Take out when the cheese is golden and bubbling.
  • Sprinkle with chives if using. Serve hot.

Notes

You can easily half this recipe and make it for four people, or double it for a crowd. Just use two 9x13" pans. 
You can totally use gravy on these potatoes, but it's already really rich, and meant to be enjoyed on their own.
