Instant Pot broccoli cheddar soup is everything you know and love about the classic - but faster. Perfect for a winter weeknight!

Cozy, comforting, and best of all: quick! This Instant Pot broccoli cheddar soup has all the hallmarks of a great weeknight fall and winter meal.

Ingredients

Nothing too complicated here. Don't forget salt, pepper and olive oil.

Cook Veggies

Sauté carrots, celery, onion, potato, and garlic until soft.

Pressure Cook

Add the broccoli and stock - pressure cook for 3 minutes.

Release & Blend

Natural release for 5 minutes, then immersion blend to be as smooth as you want.

Add Dairy

Add milk, cheese, salt and pepper to taste. If you want thicker soup, add a cornstarch slurry.

Thicken & Serve

Sear for another few minutes, then rest for 7 minutes, and serve.
