This creamy tomato spinach chicken is a colorful, flavorful and easy weeknight dish to throw together. Plus it's a one-pan wonder!
The chicken thighs, tomato and spinach are the stars of the show.
Season the chicken thighs liberally with salt and pepper.
For about 6-8 minutes per side. The chicken should be golden and cooked through. Remove from the pan.
Cook the tomatoes, garlic and shallot. Deglaze with white wine and reduce.
Add chicken broth, cream, parmesan and spinach, and simmer.
Bring the chicken back, and garnish with lemon zest and fresh basil.
It's the perfect year-round weeknight meal!
