Brining poultry is one of the easiest hacks to take your birds from good to great. The same is true with chicken wings. Add this to your repertoire and prepare to be amazed!
Brining is a process of essentially marinating poultry. You submerge it in a salty liquid, and leave it for a few hours. The brine not only flavors the outside, but penetrates the meat itself.
The ingredients are pretty simple - and flexible. You can use whatever herbs you want, just stick with the water/salt/sugar ratio.
Simmer 2 cups of the water, the herbs, sugar, salt and spices.
Take the brine off the heat, and in a large bowl, add 4 cups of cold water.
And make sure they're completely submerged. Cover and refrigerate for 2-4 hours.
Place wings on a cooling wrack, dry with paper towel. For extra crispy wings, let them dry in the fridge, uncovered, for another hour.
You can now fry them, bake them, grill them, smoke them, and pair them with whatever sauce you want! These are great naked too.
Serve these up how ever you like them best. It works with any cooking style or sauce!
