This chicken and shrimp carbonara is going to satisfy your Olive Garden cravings. It's tasty, easy, and so comforting and decadent at the same time. Juicy Argentinian shrimp, chicken breast, and pancetta pair so beautifully together in a silky smooth sauce.
We're taking this recipe up a notch by adding white wine, Argentinian shrimp, and pancetta.
We're cooking the meat separately so they don't over-cook. Start with the pancetta. Remove when it's browned.
Next cook the chicken. If the pan starts to dry out, add a little olive oil. Remove, and cook the shrimp for 2 minutes per side.
Cook the garlic and shallot. Don't worry about the brown bits on the bottom of the pan, we're dealing with that next!
Deglaze with white wine, scraping brown bits off the bottom. Reduce the wine until there's almost no liquid left.
Add cream, parmesan, salt and pepper, pasta water. Reduce until it starts to thicken slightly.
Add your protein and warm it up. Toss with cooked pasta.
With chopped fresh parsley, extra parmesan, and lemon zest if desired.
